Yes you can switch between the 2 no problem. You can even run a 26x3 wheelset on it if you want to! A lot of people who have a bridge club for 27.5 wheels just buy a set of WTB horizon tires for road use, because it's much cheaper than buying a whole new wheelset. They'll fit perfect on the stock rims, it's just more of a PITA to swap tires
We had previously put 29" front wheels and 3.0 tires on our Stumpjumper 6-Fatties (keeping the OEM 27.5x3 wheels/tires in the back) and liked it so much we did the same with the e-bikes. A 150mm 27.5 fork may be similar to a 130mm 29 fork axle to crown, so you may be back to the factory head angle, but your BB will likely be LOW. I would really recommend finding a 27.5 frame. They should be cheap because 27.5 non-plus is dead.

27.5/26 Mix Mixing 27.5 front/26 rear can be a successful way to "fudge" modern geometry on older bikes. I built up a 1999 Schwinn 4 Banger like this. It works really well. But.the BB height is 13.5" with a 2.3 rear tire. If I go with a 2.1 rear I can bring the BB height down a bit. I like the bigger tires, so I live with the BB height.
